Steps to make Sate Padang (Ayam):
  1. Siapkan daging ayam yang akan digunakan (bagian dada) cuci lalu beri perasan jeruk nipis, diamkan 15 menit lalu bilas trus otong potong daging ayamnya bentuk dadu.
  2. Masukkan bumbu halus, sereh, daun jeruk, daun kunyit pada wajan lalu tuang minyak goreng secukupnya dan tumis sampai harum lalu masukkan bunga lawang, kapulaga, cengkeh dan lengkuas aduk rata.
  3. Masukkan air dan potongan daging ayam, aduk rata sampai daging berubah warna. Lalu tambahkan garam, gula pasir dan kaldu jamur aduk rata. Dan ungkep ayam sampai matang
  4. Pisahkan daging ayam dari bumbunya. Tusuk pakai tusukan sate (jadi 16 tusuk sate). Lalu bakar di wajan teflon bulak balik satenya. Setelah selesai sisihkan
  5. Air sisa rebusan ayam, buang bumbu rempahnya lalu tuang air 300 ml. Lalu masukkan cabe merah keriting yang sudah ditumis 23 bagiannya (yang 13 bagiannya lagi buat sambal ketika disajikan). Setelah air mendidih, masukkan irisan daun bawang.
  6. Lalu tuang larutan tepung berasnya sambil di aduk aduk terus sampai mengental, jika dirasa kurang air bisa ditambahkan air panas (opsional). Kemudian masukkan garam, gula dan kaldu jamur secukupnya, koreksi rasanya. Masak kuah sate sampai meletup letup dan.angkat dari api kompor.
