  1. Cuci bersih ayam fillet, tiriskan lalu potong dadu. - Gunakan api kecil: rebus ayam dengan bahan rebusan sampai ayam hampir matang. Jangan terlalu matang karena akan sulit/pecah saat ditusuk. Angkat dan tiriskan. Sisihkan air rebusan untuk bumbu sate.
  2. Blender rempah kering sampai halus, ayak.
  3. Proses bumbu halus. Blender dengan 100 ml air.
  4. Tumis bumbu halus, rempah kering, daun salam, daun jeruk, daun kunyit, sereh, garam dan gula. sampai bumbu matang dan harum. Sisihkan dahulu 1 sdm untuk baluran ayam. Tambahkan air dan air sisa rebusan ayam. Biarkan mendidih sampai bumbu matang dan harum rempah sudah keluar.
  5. Kecilkan api, buang daun-daunan rempah, lalu masukkan campuran tepung beras sedikit-sedikit sambil diaduk cepat. Besarkan lagi api, lalu masak bumbu sampai mengental sambil diaduk.
  6. Buat sate: campur ayam yang sudah direbus dengan bumbu tumisan, lalu tusuk-tusuk. Bakar/panggang sampai harum.
  7. Tata sate di piring saji, siram dengan bumbu sate hangat. Taburi bawang goreng. Sajikan dengan lontong dan keripik singkong pedas atau kerupuk lain yg dipilih.
