  22. Make ready Tusuk sate (yang telah direndam 1 jam sebelum digunakan)

Steps to make Sate Padang Daging:
  1. Rebus daging hingga setengah matang. Lalu angkat dan tunggu hingga dingin, potong daging menjadi kecil (sesuai selera). Sisa air rebusan disimpan untuk digunakan sebagai kuah sate nantinya (lebih kurang 1 liter).
  2. Siapkan wajan, masukan minyak goreng dan tumis bumbu halus. Kemudian tambahkan bahan lainnya, serai, daun salam, daun jeruk, lengkuas, ketumbar, cengkeh, bunga lawang, bumbu kari. Tumis sampai harum. Tambahkan garam dan merica, koreksi rasa.
  3. Masukkan daging yang telah dipotong, tumis daging selama lebih kurang 15menit.
  4. Masukkan air rebusan daging sebelumnya. Kemudian aduk dan diamkan selama lebih kurang 45menit sampai 1 jam. Koreksi rasa, tambakan garam dan merica jika dirasa kurang.
  5. Matikan kompor, angkat daging dan dinginkan sebentar sebelum ditusuk menggunakan tusuk sate.
  6. Diamkan air rebusan minimal 4 jam sebelum lanjut ke tahap selanjutnya.
  7. Setelah lebih dari 4 jam, saring air rebusan tadi untuk memisahkan ampas bumbu bumbu sebelumnya (usahakan hanya airnya saja), dan masak kembali.
  8. Siapkan tepung beras, campurkan kira2 3 sendok air rebusan dg tepung beras di wadah yang terpisah (jangan sampai menggumpal, jika menggumpal tambahkan lagi air rebusan dan aduk hingga tanpa gumpalan). Kemudian tuang larutan campuran tersebut ke dalam air rebusan sedikit demi sedikit sambil air rebusan terus diaduk untuk menghindari adanya gumpalan. Tambahkan larutan tepung beras sampai mencapai tingkat kekentalan yg diinginkan (jangan terlalu kental karena pada saat sdh dingin akan lbh kental)
  9. Setelah kuah sate padang jadi. Panggang atau bakar daging yg telah ditusuk sebelumny. Sebelum memanggang olesi daging dengan minyak sayur sedikit agar tidak terlalu kering.
  10. Sajikan sate padang bersama lontong dan bawang goreng.
