  2. Siapkan panci untu merebus air hingga mendidih beri sedikit minyak sayur supaya adonan tidak saling menempel.. setelah itu cubit sesuai selera adonan ikan nya… tunggu hingga mengapung lalu angkat
  3. Untuk kuah - - Haluskan bawang putih, dan sebagian udang.. giling halus/blender.. sebagian udang lagi di cincang.
  4. Panaskan minyak untuk menumis.. tumis bumbu halus hingga harum.. tambahkan lada, gula, garam, kaldu jamur.. setelah harum masukan udang cincang dan kepala udang.. beri sedikit air supaya tidak gosong.. tumis hingga bumbu matang lalu matikan.
  5. Kuah : - - Didihkan air kurang lebih 1000ml… lalu masukan bumbu kuah tekwan nya… masak hingga air sedikit susut. Koreksi rasa.. setelah pas baru masukan pentol tekwan.. masukan sedikit" dulu sesuai porsi yg diinginkan
  6. Plating tekwan - - Tata di mangkuk tekwan dan kuah nya.. lalu tambahkan soun, irisan jamur kuping, sedap malam, seledri dan bawang goreng. Lebih nikmat ditambahkan sambal dan perasan jeruk kunci.. dan kecap (jika suka)
