  2. Tabur garam dan lada hitam secara merata ke setiap sisi ikan. Potong menjadi 2 atau 3 bagian sesuai selera.
  3. Kupas bawang putih dan digeprek (tidak diiris atau dicincang halus) agar nanti bisa dipisahkan. Bawang putih ini dipakai supaya wangi dengan rasa yang khas juga.
  4. Tuang minyak ke wajan ceper dan panaskan di api sedang. Masukkan ikan sisi daging ke wajan (kulit diatas). Masak selama 2-3 menit sampai caramelized dan berwarna golden. Balik fillet ikan.
  5. Tambahkan butter, bawang putih, dan herbs seperti thyme dan oregano (optional). Miringkan wajan, ambil butter cair di sisi wajan dan tuang keatas ikan (liat video). Lakukan beberapa kali dan biarkan masak sampai matang (tergantung ketebalan ikan). Untuk ketebalan 2-3 cm, sekitar 2 menit cukup untuk ikan sepenuhnya matang.
